Chard & Cheese on Toast

I’m not even sure if you can call this a recipe because it is the simplest thing to prepare EVER! Swiss Chard, sautéed onions and melted cheese on toast. Great for breakfast, for a quick lunch or as a side with soup. Swap out the cheese for vegan cheese from daya or field roast and it’s vegan. I love these green leafy veggies for both taste and nutritional value.

Ingredients:

  • 1 small onion, thinly sliced.
  • 1 bundle of  shredded Swiss chard, stems removed ( roughly  2-3 loosely packed cups).
  • 1/2 cup of shredded cheadar cheese
  • 3 slices of multigrain bread

Chard is real veg food! Rich in vitamin K, iron, magnesium and potassium. I like swiss chard for this toast because the leaves are a little tougher than spinach but not too tough like kale. That keeps the toast crunchy and dry. I get my chard grown locally in my weekly basket from Lufa Farms. Although not as common as kale or spinach, you should be able to find it at your local produce store especially in season ( May – August).

Preparation:

  1. Heat 2 tablespoons of oil (grape seed or olive) in a frying pan.
  2. Saute onions until light brown.
  3. Add shredded swiss chard.
  4. Add salt and pepper to taste.
  5. Saute mixture until leaves shrink and become slightly tender (Don’t over cook! allow them to keep their green color.)

6. Divide the swiss chard & onions onto three separate pieces of toast and top with cheese.

7. Place in the toaster over or oven at 350 degrees for about 5 to 7 minutes. ( Watch carefully to make sure it doesn’t burn!!)

This is my bread of choice which is available at many grocery stores in Montreal for about $3.99. I buy mine at Pomme Vert or Branche D’olivier but I’m told you can also find it at some IGA’s.  It’s very dense and crunchy so it never gets soggy, you can top it up with all sorts of veggies.
